INGREDIENTS

4 6 oz. pieces of tilapia
1/2 cup chopped celery
1/2 cup sliced carrots
1 bunch sliced scallions
2 medium tomatoes, diced and seeded
1/4 cup dry white wine
1 tsp lemon pepper
1 tsp salt
RECIPE

  • Place tilapia in glass dish sprayed with cooking spray.
  • Combine remaining ingredients and put on top, cover tightly with foil.
  • Bake at 400 for 15-20 minutes or until fish flakes easily with a fork and the veggies are tender.
