INGREDIENTS

1/2 cup all purpose flour
1 tbsp paprika
2 tsp garlic powder
8 skinless, boneless thighs (about 1.5 lbs.)
1/2 tsp salt
1 tbsp olive oil
  Cooking Spray
1 cup thinly sliced onion (about 1 medium)
5 garlic cloves, minced
1/2 cup dried tropical fruit
1/2 cup orange juice
1/4 cup tequila
1 lime, thinly sliced
RECIPE

  • Preheat oven to 400.
  • Combine first 3 ingredients in small baking dish, sprinkle chicken with salt; dredge chicken in flour mixture. Heat oil in large nonstick skillet over medium-high heat; add chicken and cooked 4 minutes on each side or until lightly browned, transfer chicken to 11 x 7 baking dish coated with cooking spray. Add onion to skillet and sauté for 3 minutes, add garlic and sauté for an additional 1 minute.
  • While onions and garlic are sautéing, combine dried fruit, orange juice and tequila, microwave on high for 2 minutes. When garlic and onions are finished, pour fruit mixture into pan; bring to a boil and scrap up brown bits and cook one minute, pour onion/fruit mixture over chicken, top with lime slices and bake for 20 minutes or until chicken is cooked to an internal temperature of 165.
